Hasselback Potatoes

Hasselback Potatoes were originally prepared in Sweden at the Hasselbacken Hotel in Stockholm. While they appear elegant and difficult to make, they are quite simple and so very flavorful. If you are a fan of baked potatoes, you will love this unique recipe for some pretty amazing spuds!

This is a delicious way to serve baked potatoes as a side dish with steak or chicken. Make sure the cuts on your Hasselback Potatoes are evenly spaced and you are not cutting all the way through to the bottom. This will keep the potato intact while baking. The presentation is pretty and they are so simple to make.

Hasselback Potatoes Recipe

What’s needed?

  • 3 large gold or russet potatoes
  • 4 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon dried rosemary, chopped fine
  • 1/2 teaspoon salt
  • Grated Parmesan cheese or sour cream, optional

How to make Hasselback Potatoes?

  • Cut a thin slice of potato lengthwise from the bottom of each potato so it forms a base for the potato and stops it from rolling around. Now cut slices along the top of the potato about 1/8 to 1/4 inch apart. Do not cut all the way through the potato, as you want the slices to remain connected.

  • Mix the oil, garlic and herbs in a small bowl. Place the potatoes on a foil-lined baking pan. Brush the oil mixture in between the slices of each potato.

I also baked some seasoned pork chops on the same sheet pan.

  • Bake the potatoes in the oven at 375 degrees for about 40-45 minutes until crispy and cooked through.

Remove from the oven and sprinkle with a bit of Parmesan cheese or a dollop of sour cream, if desired. Serve them with your favorite steak or pork chops and a salad. This recipe makes 3 servings–such a great side dish!
