Sausage Tortilla Breakfast Bake
This Taste of Home recipe was delicious! I made some simple changes to incorporate what was already in my pantry and served it for dinner instead of breakfast. Sausage Tortilla Breakfast Bake is so tasty served with avocado toast and sour cream. The cumin brings some heat to the dish without making it too spicy. I will make this one again!
This layered tortilla bake is quick to put together and bakes in a 350 degree oven for just 30 minutes. It’s a great recipe for lazy weekends or busy weeknights. Fresh fruit can be served with this breakfast bake or avocado toast is always a hit in my house.
Sausage Tortilla Breakfast Bake
What’s needed?
- 8 ounces bulk turkey sausage (or pork sausage)
- 1/2 cup canned diced tomatoes and green chiles (or mild salsa)
- 6 corn tortillas (6 inch)
- 1/2 cup shredded Monterey Jack cheese (or Colby Jack)
- 1/4 cup shredded pepper jack cheese
- 2 green onions, chopped
- 6 large eggs
- 3/4 cup low fat milk
- 3/4 teaspoon paprika
- 1/4 teaspoon ground cumin
- sour cream to finish
How to make a Breakfast Bake?
- Preheat oven to 350 degrees. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 4-6 minutes. Stir in tomatoes. I used mild corn salsa.
- Coat a 9 inch deep-dish pie plate with cooking spray.
- Line pie plate with half the tortillas. You might have to cut tortillas to fit. I used some extra tortillas and allowed them to stick up above the pie plate a bit, like a crust would.
- Sprinkle the tortillas with half of the sausage mixture, then half of the cheese and green onions. Repeat the layers. I used sliced cheese since I didn’t have shredded cheese.
- In a bowl, whisk together the eggs, milk, paprika and cumin; pour slowly over the layers.
- Bake uncovered until set, about 30 minutes. Let stand 10 minutes. Cut into wedges and serve with sour cream, salsa, and more green onions.
