Add a slightly sweet dressing to these crisp veggies and you’ll have a delicious side dish for any summer meal. Broccoli Corn Salad Recipe

What’s needed?

  • broccoli, cut into small pieces
  • sweet corn, canned (or cooked fresh corn)
  • bacon, crumbled
  • red pepper, chopped
  • carrots, shredded

For the dressing?

  • mayonnaise
  • milk
  • apple cider vinegar
  • sugar
  • salt and pepper

How to make Broccoli Corn Salad?

  • Place the chopped vegetables and bacon in a large bowl. Stir to combine.
  • Stir the dressing ingredients together in a small bowl until combined. Pour the dressing over the vegetables and stir until coated. Refrigerate the salad until ready to serve. Add salt as needed.

What can I do with broccoli stems?

Don’t throw them away! The broccoli stems have great flavor and can be used in a variety of other dishes. Here are a few suggestions:

  • You can chop them to the same size as your florets and add them to the salad. They are crunchy and delicious, not to mention full of vitamins and nutrients.
  • Peel and chop the stems. Blanch for one minute in boiling water. Drain and place them in a plastic bag. Place the bag in the freezer. Use the broccoli stems in soups, like Cheesy Broccoli Soup, or add them to stews and casseroles. Anything that calls for peas or green beans, you can easily use broccoli stems instead.
