Cinnamon Sugar Crisps with Pumpkin Fluff

Every year on Halloween, I like to make snacks for the family to munch on before we head out the door for an evening of trick or treating. Cinnamon Sugar Crisps with Pumpkin Fluff are a tasty Halloween treat! I used Halloween cookie cutters to cut flour tortillas coated with cinnamon sugar into ghosts, black bats and pumpkins. Then, I baked them in the oven to create these fun crisps. Serve them with a creamy fall dip for a favorite Halloween snack!

It’s always a good idea to eat something before heading out on Halloween. It fills your tummy and keeps you warm on a chilly night. It also prevents you from eating all of the candy that your kids are collecting. Not saying that I’ve done that 🙂

Cinnamon Sugar Crisps with Pumpkin Fluff are a sweet snack that I can prepare in advance and have ready to go. They are delicious served with easy-to-make pumpkin fluff. Add more dippers to the platter, like apple slices and graham crackers, for variety. Pour some apple cider and you’re all set for a night of fun!

Cinnamon Sugar Crisps with Pumpkin Fluff

What’s needed?

For the Crisps:

  • six 8-inch flour tortillas
  • 4 tablespoons unsalted butter, melted
  • 1/3 cup granulated sugar
  • 1/2 tablespoon cinnamon

For the Pumpkin Fluff:

  • 15 ounces pure pumpkin
  • 3.4 ounces vanilla pudding mix
  • 1/2 teaspoon cinnamon
  • 4 ounces Cool Whip topping

Tips on making Halloween shaped tortilla chips?

  • Gather cookie cutters that are in Halloween shapes, such as black cats, ghosts, pumpkins, bats and witches. Make sure that the cookie cutters are all roughly the same size. If you use some that are large and some that are small, bake them in groups of the same size. As larger shapes take longer to bake and smaller ones take less time.

  • Lay your flour tortillas in a baking sheet with sides. Brush the tortillas with melted butter and sprinkle with cinnamon sugar before cutting your shapes. This keeps the extra sugar inside the baking sheet and makes clean up much easier. Simply wash the sheet pan and you are done.

  • Lay the Halloween shaped tortilla chips on a sheet pan lined with parchment paper. This will prevent them from sticking and getting too brown while in the oven.

  • What to do with the scraps from cut out tortillas left on the baking sheet? Well, cut them into small pieces and toss them on a your sheet pan. Bake them for 5 to 6 minutes in the oven. They are great to crumble over vanilla ice cream for a cinnamon flavored treat. Store leftover whole crisps in a plastic bag for up to one week.

Cinnamon sugar tortilla chips with a creamy dip make the best snack for Halloween!
Servings: 36 crisps
Prep Time: 20 minutes

Ingredients 

For Crisps:

  • 6 8-inch flour tortillas
  • 4 tablespoons unsalted butter, melted
  • 1/3 cup granulated sugar
  • 1/2 tablespoon ground cinnamon

For Pumpkin Fluff:

  • 15 ounces pure pumpkin
  • 3.4 ounces vanilla pudding mix
  • 1/2 teaspoon ground cinnamon
  • 4 ounces Cool Whip

Instructions 

  • Whisk together the pumpkin, vanilla pudding mix and cinnamon in a medium bowl. Stir in the cool whip until combined. Refrigerate until ready to serve, at least one hour.
  • Lay flour tortillas, 2 at a time, on a rimmed sheet pan. Brush each with melted butter. Put sugar and cinnamon in an empty spice shaker or mix together in a small bowl. Sprinkle buttered tortillas with sugar mixture.
  • Cut Halloween shapes in the sugared tortillas, using cookie cutters. Ghosts, flying bats, pumpkins and black cats are all good choice. Place the tortilla cut-outs on a sheet pan covered with parchment paper. You should get 6 crisps from each tortilla.

  • Bake in the oven at 375 degrees for 8 minutes. Remove from the oven when golden and allow to cool. Repeat until all tortilla cut-outs have been baked. Recipe makes about 36-40 cinnamon crisps, depending on the size of your cookie cutters.
