Grampa’s Pancakes
Grampa’s Pancakes and Sunday mornings just go together, like sunshine and lemonade or baseball and hot dogs. My grandfather created this pancake recipe back in the 1940’s and it has been our family’s Sunday morning tradition ever since. My mother made them for us growing up and now I make them for my family. You know it is Sunday morning when you can smell the pancakes.
Add your favorite pancake toppings or mix-ins to make these fluffy pancakes just right for your family. We often add mashed bananas, chocolate chips, peaches or sometimes pecans to the batter to make some delicious new versions of the original recipe. You won’t find a better recipe for light, fluffy, delicious pancakes!
Grampa’s Pancake Recipe
Mix together:
- 2 1/2 cups flour
- 5 teaspoons baking powder
- 4 tablespoons sugar
- 1 1/2 teaspoons salt
In a separate bowl, mix together:
- 2 eggs
- 6 tablespoons oil
- 2 cups milk
How to make Grampa’s Pancakes?
- In a large bowl, mix dry ingredients. In a separate bowl, mix wet ingredients well. Add wet ingredients to dry and stir to combine. You can add a mashed ripe banana, a teaspoon of cinnamon or some chocolate chips, just to mix things up a bit.
- Drop 1/3 cup batter onto a lightly greased griddle at 350 degrees or in a skillet over medium high heat. When you see little bubbles form on the pancakes, it is time to flip them over.
- Cook for 2 more minutes and serve hot with bacon and fruit. Recipe makes 16 medium pancakes.
Can I freeze pancakes?
We sometimes have a few pancakes leftover and I simply slide 3 or 4 pancakes into a plastic freezer bag and seal it tightly. Place them in the freezer for up to one month. They make a great quick breakfast when popped into the toaster or microwave. They are also yummy for an after-school snack before heading out to a soccer match or baseball game. A delicious treat anytime!
