Cream Wafers
Holiday baking always triggers memories of my sweet grandmother and her beautiful Christmas cookies. She made more than a dozen different kinds of cookies each year and they were delicious and perfect. Cream Wafers are a favorite holiday cookie and made by putting two wafers together with homemade frosting in between. This is her recipe, a delightful reminder of my grandmother during the holidays.
Cream Wafers, Double Sugar Cookies with Jam, Peanut Butter Blossoms and more were anticipated every year for the holidays. My grandmother would begin baking these traditional holiday cookies in November, then box them and chill her delicious treats until Christmas Eve. She carefully plated her creations on tiered plates and platters and her dessert table looked like the cover of a magazine. The family would arrive and happily eat her festive cookies and bars. A memory that I’ve carried with me for years and am happy to pass on the tradition with my family.
As I was growing up, Cream Wafers were always part of our family holiday gatherings. They were dainty and delicious, and easily recognized by the pattern of fork marks on the top of each wafer. The filling was sweet and creamy and was sandwiched between two wafers. My grandmother made them with pink and light green frosting for Christmas every year.
Cream Wafers are the perfect addition to a dessert table, as they as small and delicate. The wafers are pastry-like and filled with a sweet homemade frosting made of butter, cream, vanilla and confectioners’ sugar. They travel well on cookie trays and are coated with granulated sugar for a pretty appearance and sweet taste. They are dainty and delicious and get baked for only 8 minutes.

- 2 baking sheet pans
- parchment paper
- stand mixer
- rolling pin
- fork
- 1 1/2-2 inch cookie cutter
Cream Wafers Recipe
What’s needed?
- 1 cup unsalted butter, softened
- 1/3 cup heavy whipping cream
- 2 cups all-purpose flour
- 1/2 cup granulated sugar for coating the wafers before baking
For frosting:
- 1/4 cup unsalted butter, softened
- 3/4 cup confectioners’ sugar
- 2 tablespoon heavy cream or milk
- 1 teaspoon vanilla
How to make Cream Wafers?
- Add butter, cream and flour to a stand mixer and mix thoroughly. Form the wafer dough into 4 flat discs, wrap individually with plastic wrap and chill for one hour.
- Place granulated sugar on a large plate and set aside.
- Roll one disc of dough to 1/8-inch thickness on a lightly floured surface. Cut 1 1/2-inch rounds. Place rounds on the plate with granulated sugar, turning to coat both sides. Place rounds onto baking sheets lined with parchment paper, about 1 inch apart. Prick each wafer four times with a fork before baking.
- Bake cookies at 375 degrees for 8 minutes, until slightly puffy. Remove from oven and place on a wire rack to cool completely.
- Mix all frosting ingredients in a small bowl and add two drops of food coloring or gel to tint the frosting to desired color. Put two cookies together with frosting. Use a small knife or piping bag to carefully apply the frosting. Recipe makes 3 dozen (double) cookies.
Serve these delicious little cookies with ice cream for a sweet holiday treat. Cream Wafers are a tasty addition to any holiday dessert table!
