Cheeseburger Meatloaf and Fries Recipe
- 2 pounds mix of ground beef and ground pork
- 1 slice of white bread, cut into small cubes
- 2 eggs
- 1/2 cup milk
- 1 cup bread crumbs
- 1 cup medium sharp cheddar cheese, shredded
- 4 green onions chopped
- 1 teaspoon garlic salt
- 4 slices of bacon
- canola oil for frying
- 4 large potatoes, cut into 1/2-inch sticks
How to make Cheeseburger Meatloaf?
- Mix all ingredients, except the bacon, in a large bowl.
- Add more bread crumbs if the mixture is too wet.
- Form into four small loaves. Place the loaves in a large baking dish.
- Cut each strip of bacon in half and place on top of meatloaf. Bake in a 350 degree oven for 35-40 minutes.
How to make homemade fries?
- While the meatloaf is baking, heat about 36 ounces of canola oil in a medium pan. I used a medium Dutch oven. You should have about 3 to 4 inches of oil in the pan. Heat to 350 degrees. Cut your potatoes into 1/2 inch by 1/2 inch sticks. I do not peel the potatoes.
- When oil is hot, drop a few sticks at a time into the oil. I do about two potatoes at one time.
- NEVER leave the stove when frying something in hot oil. Fry the potatoes for about 7-8 minutes. Remove them from the oil with a long-handled slotted spoon. Place the hot fries on a plate lined with paper towels to drain. Repeat until all potatoes are fried. Sprinkle with sea salt and cracked black pepper.
- To ensure crispness, place all fries on a cookie sheet lined with parchment paper and place under a 400 degree broiler for about 5-7 minutes.
