Bacon Wrapped Chicken Recipe
What’s needed?
- 2 large chicken breasts, butterflied and cut in half (8 pieces)
- 8-10 pieces of bacon
- 1 medium onion, sliced
- garlic salt
- salt and pepper
- 1 teaspoon Italian Seasoning
- 1/4 cup brown sugar
- 1/2 cup barbecue sauce
How to make Bacon Wrapped Chicken?
- Begin by cutting chicken into pieces about the size of a deck of cards. Cut each breast in half and then butterfly each half. You should have 8 pieces of chicken. Sprinkle each piece of chicken with garlic salt.
- Put a few pieces of onion on top and wrap one strip of bacon around each piece of chicken. Put the wrapped chicken in a 13×9-inch baking pan.
- Sprinkle salt, pepper, and Italian Seasoning on each piece of wrapped chicken.
- Cover the baking pan with aluminum foil and bake in the oven at 350 degrees for about 35-40 minutes. Carefully remove the pan from the oven and remove the foil. Drain any excess liquid (fat) from the bacon.
- Sprinkle some brown sugar and brush a layer of barbeque sauce over each piece of chicken.
- Turn the oven to broil. Place the pan under the broiler for about 10-12 minutes, watching the chicken closely so it doesn’t burn or get too dark.
The chicken should be golden brown and the bacon should be crisp and caramelized on top. Your kitchen will smell delicious. Allow the chicken to cool slightly in the pan before serving. I served the bacon wrapped chicken with mashed potatoes and roasted asparagus. It was simple and so good! Everyone ate two pieces…enjoy!
