Quick Guacamole
Avocados are high in fiber, potassium, vitamins E and C. They are also considered to be a super food, because of their high amount of monounsaturated fat. A great way to use avocado in your diet is to make guacamole. This favorite dip of mashed avocados and diced tomatoes can be a tasty summer appetizer or served with a Mexican main dish or salad. Quick Guacamole always gets compliments when I serve it to friends and family.
What is guacamole?
Salsa and guacamole have quickly become two of the most popular dips in America. Salsa now outsells ketchup each year. It is lower in calories than ketchup and tastes zesty and sweet.
Guacamole is a combination of avocado, onion, fresh tomato, lime juice and cilantro. And it is loved by so many because it is made with ripe avocados, a superfood that is loaded with nutrients and vitamins. These two healthy dips/condiments are certainly a dynamic duo! Here’s an easy recipe for Quick Guacamole.
Quick Guacamole Recipe
What’s needed?
- 3 medium avocados, chopped and slightly mashed
- 2 small Roma tomatoes, chopped
- 1/2 small white onion, diced
- 1 lime or lemon, juiced
- 2 tablespoons fresh cilantro or parsley, chopped
- salt and pepper, 1/2 teaspoon each
- cayenne pepper, optional
How to cut an avocado?
- Begin by peeling the avocados. There are two ways to do this. Cut the avocado lengthwise to the pit or seed, rotating the knife around all sides.
- Twist each half in the opposite direction and the avocado will separate down the middle, leaving a seed in one half.
- At this point you have two options. If you are skilled with a knife, hold one half of the avocado in the palm of your hand and using the knife, strike the pit or the seed. For safety sake, hold the avocado with a towel, so you don’t cut yourself. Then, twist the knife and the seed will come out.
- If you are not comfortable with that process…it does take some practice…then simply use your knife to cut the avocado half lengthwise again. Twist the knife to remove one quarter of the avocado and then use your fingers to twist off the seed. This is the prefered method.
- Using a spoon, slide it between the skin and the flesh of the avocado. It will separate easily.
How to make Guacamole?
- Chop the avocado into small pieces and place them in a bowl. Add the juice of a lemon or a lime and use a fork to mash the avocados slightly.
- Add the chopped tomatoes, diced onion, salt, pepper, and cilantro. Blend all together. If you do not like cilantro, you can also use flat-leaf parsley. Add a pinch of cayenne pepper for some spice.
This recipe makes about 6 servings. You can serve this dip with corn tortilla chips for dipping. I served it with chips and a beef taco salad. Guacamole is always a flavorful treat and so healthy too!
