Meatloaf and Coca Cola BBQ Sauce
One of my father’s favorite meals was meatloaf and potatoes. He would ask my mother to make it often as we were growing up. I also make it regularly now for my family. And homemade Coca Cola BBQ Sauce makes it sweet and tangy. This sauce also tastes amazing on chicken and ribs. Meatloaf and Coca Cola BBQ Sauce will quickly become a favorite of yours, too!
A good barbecue sauce is the best friend to any meatloaf, adding flavor and moisture to the beef. So why not make it yourself. It only takes minutes to put together and cooks while you are assembling the meatloaf. This rich BBQ sauce can be added to so many meat dishes. Be sure to put the remaining sauce in a mason jar and store it in the refrigerator for use in another dish, like chicken or spareribs.
Coca Cola BBQ Sauce Recipe
What’s needed?
- 1/4 cup minced onion
- 1/4 cup minced green pepper
- 1 teaspoon minced garlic
- 2 cups coca cola
- 2 cups canned chopped tomatoes
- 1/3 cup brown sugar
- 1 tablespoon Worcestershire sauce
- 1/2 cup ketchup
- 1 teaspoon yellow mustard
- Salt and pepper to taste
How to make BBQ Sauce?
- Saute the onion and green pepper in a saucepan with a drizzle of olive oil until softened. Add the remaining ingredients and bring to a boil.
- Reduce the heat and simmer for 30-45 minutes until thickened. Remove from the heat and use an immersion blender to puree the sauce until smooth.
- Pour the sauce into a dish and set aside to cool slightly.
Classic Meatloaf Recipe
What’s needed?
- 1 pound ground beef
- 2 eggs
- 1 cup crushed crackers
- 1/3 cup milk
- 2 green onions, finely chopped
- salt and pepper
- 1 teaspoon Italian Seasoning
- 1 teaspoon Worcestershire sauce
How to make Classic Meatloaf?
- While the BBQ sauce is simmering, place all meatloaf ingredients in a large bowl. Mix thoroughly.
- Form the mixture into a loaf and place it into a baking dish. Bake at 350 degrees for 35 minutes.
- Remove the meatloaf from the oven and pour some of the BBQ sauce over the top and bake for another 10 minutes. Remove meatloaf from the oven and allow it to rest for 10 minutes.
