Chicken Soup with Ramen Noodles
This soup is a kid-friendly version of Classic Chicken Noodle Soup. My boys love Ramen Noodles, so sometimes I add them to soup instead of egg noodles. Chicken Soup with Ramen Noodles is great for a cold winter day or when you are feeling under the weather. Quick and easy to make, it always “hits the spot!”
Kids always eat with their eyes first. If it looks good, they will try it. My boys have always like Ramen noodles. They are fun to eat and a great addition to this comforting homemade chicken soup. It has become one of their favorite meals, slurping up the Ramen is tasty and fun!
Chicken Soup with Ramen Noodles Recipe
What’s needed?
- 1 large onion, chopped
- 3 celery stalks with leaves, chopped
- 3 large carrots, peeled and chopped
- 2 tablespoons canola oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 8 cups of water
- 3 leg quarters, thigh and drumstick together
- 2 packages Ramen Noodle Soup with packets
How to make Chicken Soup with Ramen?
- Add the oil to a large dutch oven over medium-high heat. Add onion, celery and carrots and saute until tender, about 10 minutes. Season the vegetables with salt and pepper.
- Add the water and stir. Place the leg quarters in the soup pot and cover, cooking over medium-low heat for about an hour. When the chicken is cooked through, remove it from the soup and remove the bones. Add the chicken back to the soup.
- Add two packages of Ramen Noodle soup, including the seasoning packets. Allow to simmer for 5 minutes.
The soup will be flavorful and your house will smell amazing. And the aroma of homemade chicken noodle soup, nothing is better. Ladle the soup into bowls and serve it with crackers or grilled cheese sandwiches. Your kids, big or small, will enjoy this comforting bowl of soup.
