Pillsbury has always been known as a source for great recipes for desserts and savory dishes, too. These Chocolate Chip Cheesecake Bars are no exception. They require only 6 ingredients and they come together in about 45 minutes. Using Pillsbury Chocolate Chip Cookie Dough for the crust saves you time in the kitchen. Such a delicious twist on the classic chocolate chip cookie!

Ahh, the chocolate chip! It has become a staple for American bakers. Each year Americans eat more than 70 billion chocolate chip cookies, half of which are homemade. Of course, that makes the classic chocolate chip cookie the best-selling cookie in the United States.

This recipe builds on that classic chocolate chip cookie, by using prepared cookie dough for the crust and then adds a layer of cream cheese to make a dessert that is sweet and creamy. A perfect pairing for a perfectly simple dessert!

Chocolate Chip Cheesecake Bars Recipe

What’s needed?

  • 2 8-ounce packages of cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 2/3 cup mini-chocolate chips (or 2/3 cup shredded coconut)
  • 2 rolls of Pillsbury refrigerated chocolate chip cookie dough (16.5 ounces each)

How to make Chocolate Chip Cheesecake Bars?

  • Heat oven to 350 degrees. In an ungreased 13×9-inch baking dish, press 1 and 1/4 rolls of cookie dough evenly into the bottom of the dish.
  • In a medium bowl, beat cream cheese, sugar, vanilla, and eggs until smooth and creamy. Stir in the mini-chocolate chips. Pour the mixture over the cookie dough in the baking dish. Crumble the remaining cookie dough over the cream cheese layer.
Add remaining cookie dough.
  • Bake the bars for 35 to 40 minutes or until golden brown and firm to the touch. Remove from the oven and allow to cool for 30-60 minutes.
  • Refrigerate the bars for at least 2 hours or overnight. Cut into 24 bars and store any leftover bars in the refrigerator.
