Crispy Chicken Cordon Bleu
The classic combination of ham and cheese is even better when rolled inside of a chicken breast, dipped in bread crumbs and baked to a crispy, golden brown. Crispy Chicken Cordon Bleu is a family favorite in our home and just might become a favorite of yours, too. Comfort food at its best!
This is one of those recipes that sounds difficult to make, but is surprisingly easy to put together and tastes like you spent hours making it. You will love the salty ham and creamy cheese rolled inside of crispy chicken. Be sure to give the recipe a try and leave me a comment below.
Crispy Chicken Cordon Bleu
What’s needed:
- 4 chicken breast halves, pounded thin
- garlic salt and pepper
- 4 thin slices of honey ham
- 4 thin slices of Swiss cheese
- 1 cup flour, divided
- 1/4 cup cornmeal
- 1/2 cup Italian style bread crumbs
- 2 eggs, beaten with 2 tablespoons of milk
- 1/2 cup canola oil
How to make Crispy Chicken Cordon Bleu?
- Put the chicken pieces between two pieces of plastic wrap and pound them with a meat mallet (or the bottom of a small saucepan) until they are 1/4 to 1/2 inch thick. Season all chicken pieces with garlic salt and pepper.
- Take one slice of Swiss cheese and fold it 2 or 3 times. Wrap one piece of ham around the cheese.
- Place the ham and cheese roll on a piece of chicken and roll it up, securing it with wooden toothpicks.
- Put 1/2 cup flour, the cornmeal, and the breadcrumbs onto a plate and mix. On a second plate, beat the eggs and milk until combined. On a third plate, place another 1/2 cup flour.
- Heat the canola oil in a medium skillet over medium high heat. Dip each chicken bundle into the flour and coat. Then dip each roll into the egg mixture, then roll it in the bread crumb mixture. Place each chicken roll in the hot oil and cook until golden brown, about 3-5 minutes per side.
- Brown chicken on all sides and place in a baking dish.
- Bake the chicken for 20 minutes in a 350 degree oven. Remove the toothpicks and allow to cool slightly before serving.
I served the Crispy Chicken Cordon Bleu with Alfredo noodles and asparagus. You can also make a creamy cheese sauce to cover the chicken, if desired.
