Spicy Tortilla Bake
Celebrate Cinco de Mayo this year with this delicious recipe. Spicy Tortilla Bake is easy to assemble and so flavorful. Flour tortillas are layered with spicy ground beef, Pepper Jack cheese, and green chilis to make this Mexican casserole. Serve it with cool sour cream, a crisp salad and a refreshing Margarita. This casserole is easy to assemble and bakes in the oven for just 35 minutes. Flour tortillas get layered with the spicy flavors of seasoned ground beef, diced tomatoes, green chilies, pinto beans and Pepper Jack cheese. Salsa Verde tops the whole casserole just before baking it. This ‘Mexican Lasagna’ makes a delicious weeknight meal!
Spicy Tortilla Bake Recipe
What’s needed?
- 1 1/2 pounds ground beef
- 1 envelope mild taco seasoning
- 10 ounces Rotel mild diced tomatoes and green chilies
- 15 ounces pinto beans
- 2 cups Pepper Jack cheese, shredded
- 2 cups cheddar cheese, shredded
- 8 flour tortillas (8 inch size)
- 16 ounces mild Salsa Verde
How to make Spicy Tortilla Bake?
- Spray a 13×9 inch baking dish with cooking spray. Place two tortillas in the bottom of the dish to cover.
- In a large skillet, cook the ground beef over medium heat until no longer pink. Drain the grease and add the taco seasoning and tomatoes.
- Drain and rinse the pinto beans in a small strainer. Add the beans to the skillet. Stir and cook the beef, tomatoes, and beans for 5 minutes.
- Place 1/3 of the beef and bean mixture on top of the tortillas in the bottom of the baking dish and spread evenly.
- Mix the shredded Pepper Jack and Cheddar cheeses together in a medium bowl. Sprinkle 1 cup of the shredded cheese mixture over the beef and bean mixture. Cover the cheese mixture with two more flour tortillas.
- Repeat the layers two more times, ending with two tortillas on top. Pour the Salsa Verde over the top of the casserole. Bake in a 350 degree oven for 35 minutes.
- Remove from the oven and allow the casserole to cool for 5 minutes before serving. Add more shredded Pepper Jack to the top, if desired.
