Bread:

  • 1 cup pumpkin (canned)
  • 1 cup sugar
  • 1 egg
  • 1/3 cup canola oil
  • 1/3 cup milk
  • 1 1/2 cups flour
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1/3 cup chopped pecans, optional

Filling:

  • 8 ounces cream cheese, softened
  • 3 tablespoons sugar
  • 1 egg
  • 1 tablespoon milk

Topping:

  • 1 cup confectioners’ sugar
  • 3 tablespoons milk

How to make Pumpkin Bread with Cream Cheese?

  • Spray the bottom and sides of a 9×5-inch bread pan with cooking spray. Dust with flour, set aside. Heat your oven to 350 degrees. In a large bowl or stand-mixer, combine the pumpkin, sugar, egg, oil, and milk. Mix until blended.
  • In a medium bowl, combine the dry ingredients for the bread, except for the nuts.
  • Slowly add the dry ingredients to the wet, mix until blended.
  • Add the pecans and stir. It’s looking really good.
  • Now, for the filling! In a medium bowl, blend the cream cheese, sugar, egg and milk until creamy. Pour half of the bread batter into the prepared loaf pan, then top with the cream cheese filling, and finally top with the remaining batter.

  • Bake the bread in a 350 degree oven for about 55-58 minutes. It will be firm to the touch and golden brown. While the bread is baking, mix the topping ingredients in a small bowl until blended. When the bread has cooled, remove it from the loaf pan and drizzle the topping over it.
