Pumpkin Crunch is soft like pumpkin pie on the bottom and crunchy on top like a crumble. My mother-in-law, Sherrie, originally gave me this recipe years ago. She made this classic fall treat for my birthday one year and I was hooked! It is so easy to make and turns out delicious every time. It’s the best Fall dessert for any family gathering!

Pumpkin Crunch

Sometimes using a shortcut in the kitchen helps us get a meal or a dessert made in a shorter amount of time. Well, this is one of those desserts. It calls for a box of yellow cake mix instead of measuring all of the dry ingredients separately. A real time saver when making this favorite Fall dessert.

There are only 8 ingredients required to make this easy Fall dessert. Serve Pumpkin Crunch with vanilla ice cream to make a dessert that your family will gobble up. It always disappears quickly in my house. The soft, sweet pumpkin filling with the crunchy topping just can’t be beat!

Pumpkin Crunch Recipe

Ingredients:

  • 16 ounce can pumpkin
  • 12 ounce can evaporated milk
  • 1 cup sugar
  • 3 eggs
  • 4 teaspoons pumpkin pie spice
  • 1 box yellow cake mix
  • 3/4 cup unsalted butter, melted
  • 1 cup chopped walnuts (pecans or pistachios)

How to make Pumpkin Crunch?

  • Using a hand mixer, combine the first 5 ingredients in a large bowl. Pour the pumpkin mixture into a greased 9×13 inch baking dish.

  • Sprinkle one box of yellow cake mix evenly over the pumpkin mixture. Melt the butter and drizzle it over the cake mix. Add the chopped walnuts to the top of the dessert.

  • Bake in a 350 degree oven for 50-55 minutes. The dessert will be golden brown and crunchy on top with a soft bottom. Remove the dessert from the oven and cool slightly.

How to serve Pumpkin Crunch?

You can serve Pumpkin Crunch with vanilla ice cream or whipped cream…or live a little and have both! Simply yummy!
