Cheeseburger Pockets

This is an easy recipe that I knew everyone would love. I made Cheeseburger Pockets for a quick dinner and my family gobbled them up. A few simple ingredients put together and you’ve got a fun twist on an All-American classic burger.
A tube of biscuit dough is a simple shortcut to making these cheesy, beefy bundles. By rolling each biscuit into a disc, you’ve got the making of a Cheeseburger Pocket that gets filled with a seasoned ground beef mixture. Easy to make and great for getting kids excited about helping in the kitchen.
Cheeseburger Pockets
What’s needed?
- 1 pound lean ground beef
- 1 teaspoon garlic salt
- 1/2 teaspoon black pepper
- 1/2 medium onion, chopped
- 1/2 cup ketchup
- 1 tablespoon mustard
- 2 tablespoons sweet relish (optional)
- 1 tube of Pillsbury Grands Homestyle biscuits (8 biscuits)
- 2 tablespoons melted butter
- 8 slices of American cheese
How to make Cheeseburger Pockets?
- In a large skillet, brown the onion and ground beef. Add the salt and pepper and cook for 5 minutes. Stir in the ketchup, mustard, and relish and cook on low for 5 more minutes.
- While the meat mixture is cooking on low, roll out the biscuit dough. Dust the counter with a bit of flour and use a pizza roller or rolling pin to roll the dough into 6 inch discs.
- Place 1/3 cup of the meat mixture inside each circle of dough and fold the edges around the meat to make a pocket.
- Bring together the edges of the dough and pinch at the top. Don’t worry if a bit of the meat shows through.
- Place the cheeseburger pockets on a baking sheet lined with parchment paper. Brush each bundle with melted butter. Bake in the oven at 350 degrees for 15 minutes.
- After 15 minutes, place a slice of mild cheddar cheese on top of each cheeseburger pocket. Bake for 3-5 minutes until cheese is melted and pockets are golden brown.
- Remove the sheet pan from the oven and allow the pockets to cool slightly before serving.
I served these Cheeseburger Pockets with crispy hash browns and fruit. This is a great lunch on the weekend or quick and easy dinner on a weeknight.
