Italian Sausage and Chicken Soup with Spinach
Often times when I think about what to make for dinner, I check my refrigerate and pantry to see what I have on-hand and use what I find to create a meal. That is how I made this Italian Sausage and Chicken Soup with Spinach. I grabbed rotisserie chicken, Italian sausage, carrots, white beans and chicken broth and put it all together to make a steamy pot of hearty soup. My kitchen smelled like an Italian restaurant. Grab a spoon and let’s make soup!
I’ve said many times that soup is one of my favorite meals to make…and eat. It’s always comforting and comes together quickly, getting better and better in flavor as it simmers on the stove or in a slow-cooker. This recipe is packed full of flavor with Italian sausage, chicken, tomatoes, onion, garlic, beans, broth, spinach and pasta. A marriage of amazing ingredients creates a rich, flavorful soup.
There are a few ways to make this soup, either in the crockpot cooking on low for 4 hours or in a Dutch oven on the stovetop simmering for about an hour. Either way will result in a soup you’ll love and will want to make again.
Italian Sausage and Chicken Soup with Spinach
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, chopped
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1 teaspoon minced garlic
- 2 cups chopped rotisserie chicken
- 1 pound ground mild Italian sausage
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- salt and pepper
- 2 tablespoons flour
- 16 ounces chicken stock
- 15 ounces chopped tomatoes with juice
- 1 cup tomato sauce
- 1 cup water
- 15 ounce can of great northern beans
- 1/2 cup Ditalini pasta, uncooked
- 3 cups of fresh baby spinach leaves, large stems removed
- Parmesan cheese for garnish
How to make Italian sausage and Chicken Soup with Spinach?
- In a large Dutch oven or soup pot, heat the olive oil over medium heat. Add the onion, celery and carrots and saute for 8 minutes until softened.
- Add the Italian sausage and cook until browned.
- Add the chopped chicken, garlic and spices to the pot. Stir to combine and cook for 5 minutes.
- Add the flour and stir until the flour is combined and absorbed into the mixture.
- Stir in the chicken stock, tomatoes, tomato sauce and water. Bring the soup to a simmer and cook for 15 minutes.
- Add the beans and the pasta to the soup. Continue to simmer for 30 minutes.
- Just before serving, add the fresh spinach to the soup and stir until wilted. Cook for 5 minutes and serve the soup with breadsticks or Italian bread. Sprinkle Parmesan cheese over the soup. Makes 6 servings.
