Air Fryer Egg Rolls
My son recently invited us to come to his house to make sushi. He received a sushi kit for his birthday last Fall and was eager to give it a try. To go with the sushi, I made vegetable low mein and Air Fryer Egg Rolls. I’ve made egg rolls many times, but never cooked them in the air fryer. They were great—crunchy and filled with chicken and veggies. We dipped them in soy sauce and gobbled them up.
This recipe makes 12 egg rolls, which is enough for a large gathering. You could easily downsize the recipe by cutting it in half to make only 6 egg rolls.
Making them yourself is a more affordable choice as opposed to buying them in a restaurant. And they’re easy to put together, just chop your vegetables, saute the chicken and veggies in a skillet, then roll it all up in an egg roll wrapper. Air frying the egg rolls will take between 12 and 25 minutes depending on the size of your air fryer.
Can I freeze egg rolls?
Yes, extra egg rolls can be frozen AFTER they are baked. You’ll want to make sure to air fry or bake the egg rolls prior to putting them in the freezer. Allow them to cool completely and wrap each egg roll individually with plastic wrap and then place them in a large resealable plastic bag. Freeze for up to 3 months.
Air Fryer Egg Rolls
Ingredients:
- 2 tablespoons canola oil
- 1 pound ground chicken
- 1 teaspoon minced garlic
- 1/2 cup shredded carrots
- 2 green onions, chopped
- 3 cups shredded Savoy cabbage
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 12 egg roll wrappers (I found these in the dairy case at the grocery store near the refrigerated pasta and tofu.)
- cooking spray
How to make egg rolls in the air fryer?
- Chop and prepare all of your vegetables before begging to cook the filling for your egg rolls. Have all of your ingredients on the counter ready to add to the skillet.
- Add the oil to a large skillet on medium heat. Add the chicken and green onions to the skillet and cook until the meat is no longer pink, about 8 minutes.
- Add the garlic, carrots and cabbage and continue stirring while cooking until the cabbage softens, about 5 more minutes.
- Stir in the soy sauce and vinegar. No salt is needed. Remove the skillet from the heat and allow to cool before rolling up the egg rolls.
How to roll egg rolls?
- Fill a small bowl halfway with water and set it nearby. Put an egg roll wrapper on a clean cutting board with the points facing up and down, so it will look like a diamond as you look at it.
- Add 1/3 cup filling to the center of the wrapper. Grab the bottom tip of the wrapper (the one that is closest to you) and fold it over the filling. Now fold the right end to the center and then the left end to the center.
- Dip your finger in the water and wet the top tip of the egg roll wrapper. Finish rolling and gently press the top tip to the egg roll to seal it. The water should make it a bit sticky and help it to stay closed.
- Place the egg rolls in a pan that has been sprayed with cooking spray or on a baking sheet lined with parchment paper so they do not stick. Repeat with the remaining fillings. You should get about 12 egg rolls from this recipe.
- Preheat the air fryer to 390 degrees.
- Place the egg rolls in the basket one inch apart. Spray them lightly with cooking spray and air fry for 6 minutes, turn them over, spray lightly and air fry for another 6 minutes. Repeat with remaining egg rolls.
- Serve the egg rolls with plum sauce or soy sauce and your favorite asian meal. We like egg rolls with Honey Orange Chicken or Mongolian Beef and Rice.
Sushi anyone?
If you remember, I mentioned earlier that we got together to make sushi. Well, it turned out great! We need a little more practice, but it was fun and easier than we thought…and so delicious! We made California Rolls and Spicy Tuna Sushi rolls and ate them with Star Wars Lightsaber Chopsticks. We’ve decided to get together to make sushi, and egg rolls, again.
