Banana Bread
My husband and his colleagues take turns providing breakfast on Fridays for everyone at work. There are some amazing bakers in his office. And now it is his turn. I made homemade Banana Bread to go with fruit and yogurt. This recipe makes two loaves, so I divided the batter and added walnuts to half and chocolate chip to the other half. Two yummy versions of bread from one basic recipe. They’re going to love it!
Banana Bread is a breakfast staple in many homes, including mine. I make it more than any other breakfast bread recipe and there are lots of ways to make it sweet and tasty. Add nuts, chocolate chips, dried fruit or whatever you might have in your pantry to make it special.
And Banana Bread is the best way to use up those really ripe bananas that your kids won’t eat. Never get rid of overripe bananas. They are sweet and delicious when used in baking. They make the best banana bread and desserts. You want to use bananas that are overly ripe, the more brown spots the better. This means they will be super sweet and soft. Mash them up and add them to pancake batter, smoothies, bread or cookie dough for an extra pop of flavor!
Banana Bread Recipe
What’s needed?
- 1 cup unsalted butter, softened
- 1 1/2 cups sugar
- 2 large ripe bananas, mashed
- 4 eggs
- 2/3 cup milk
- 2 teaspoons vanilla
- 4 cups of flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup walnuts or pecans, chopped
- 1 cup chocolate chips
How to make Banana Bread?
- In a large bowl, beat the butter and sugar until creamy.
- Mash bananas with a fork and add them to the bowl, along with the eggs, milk and vanilla. Beat until combined.
- Mix the dry ingredients together, except nuts and chips, in a separate bowl. Begin to add the flour mixture to the wet ingredients, one cup at a time, mixing after each addition.
- Divide the batter evenly into two bowls. Stir in 1 cup of chocolate chips to the first bowl and mix. Spray mini loaf pan or mini bundt pan with cooking spray. Spoon the batter into the pan. You can also use a regular size loaf pan to make one large loaf.
- Add 1/2 cup chopped walnuts or pecans to the second bowl of batter. Mix until combined.
- Spoon the batter into a mini loaf pan that has been sprayed with cooking spray. Bake at 350 degrees for 18-22 minutes. Insert a toothpick in the center to test if the bread is done.
- If you are using a regular size loaf pan, bake at 350 degrees for 50-55 minutes. Allow to cool and remove loaves from the pan.
Serve this Banana Bread with fruit and yogurt…or dust with powdered sugar. Sweet and simple!
