BBQ Pork Spareribs

I learned years ago that the best way to cook spareribs is by roasting them low and slow. Cooking them at a low temperature for a long time always results in juicy, tender ribs. Using a dry rub before cooking and a great barbecue sauce after cooking makes BBQ Pork Spareribs flavorful and finger-licking good every time.

How to pick a dry rub for ribs?

Selecting a good dry rub is key to making flavorful ribs. I use one that combines salt, sugar, dried chili peppers, rosemary, garlic, onion powder, paprika and other spices. You want to look for one that will give you some saltiness, some heat, and some smokiness. There are a number of great brands to try, like Traeger and Weber Dry Rubs, which can be purchased at a grocery store or a hardware store, wherever grills and grilling accessories are sold.

There are also a variety of stores that specialize in making and selling spice blends, such as the Spice and Tea Exchange. Their Butcher’s Rub is a great spice blend, a bit spicy, but can be used on pork or beef and will make your grilled foods delicious. Sample a few and you’re sure to find a favorite.

Ingredients:

  • 2 racks of pork spareribs
  • 6 large red potatoes, cubed
  • 1 cup carrots, sliced
  • 1 large yellow onion, chopped
  • BBQ dry rub of your choice
  • 1 12-ounce beer or ale
  • BBQ sauce for finishing

How to make BBQ Pork Spareribs?

  • Place the potatoes, carrots and onions on a large baking sheet and drizzle with a few tablespoons of canola oil.
  • Remove the ribs from the wrapping and trim fat, if needed. Place the racks of ribs on top of the veggies. Coat both sides of each rack with dry rub. Add one cup of beer to the bottom of the sheet pan.
  • Cover the whole sheet pan with foil and allow it to stand at room temperature for about 30 minutes. Heat the oven to 325 degrees and bake for 3 hours. Remove the pan from the oven, spread your favorite barbecue sauce on the ribs and bake for 30 minutes more uncovered.
  • Remove the pan from the oven and allow the meat to rest for 15 minutes. Slice in between every 2 or 3 ribs and serve with baked veggies and a chopped green salad.

For extra smoky flavor, place the spareribs on the grill or smoker for 15 minutes to finish them. This will give the ribs a bit of smokiness, but also crisp up the outside of the meat. So good!
