Beef Taco Salad

After a busy day, one of my favorite ‘go-to’ meals is Beef Taco Salad. It only takes minutes to make, it is inexpensive, and tastes so good. My family asks for this salad often. I sometimes make this without the beef, it creates a flavorful meatless meal. Use your favorite ingredients and make it YOUR way…enjoy!

Beef Taco Salad

A taco salad is the best of both worlds, a taco and a salad! You begin with a layer of your favorite tortilla chips on the bottom, add some freshly shredded lettuce, a layer of flavorful beef, and some fun toppings. We love taco salad with salsa, cheddar cheese, avocado and sour cream on top. The creamy avocado and sour cream go so well with the zesty beef and crunchy lettuce and chips. It really is a match made in heaven.

Beef Taco Salad Recipe

What’s needed?

  • 1 bag of Scoops Tortilla Chips
  • 1 pound ground beef
  • 1 small yellow onion, chopped
  • 1 packet of taco seasoning, mild
  • 1/4 cup water
  • 1 head of iceberg lettuce, shredded
  • 16 ounces corn salsa
  • 8 ounces cheddar cheese, chopped or shredded
  • 1 avocado, remove the pit and slice
  • 8 ounces sour cream

How to make Beef Taco Salad?

  • Begin by browning the ground beef in a large skillet over medium heat. Add the chopped onion and continue cooking until beef is no longer pink.
  • When the beef is browned, drain the fat and add 1/4 cup water to the skillet, along with one packet of taco seasoning. Stir until combined and simmer for 5 minutes. Remove the skillet from the heat.

  • Now you can begin to assemble the salads. This recipe will make 4 large taco salads. First put a layer of chips on the plates. Then add a layer of iceberg lettuce. I really like iceberg the best in this salad. Add some of the warm taco beef around the edges of the lettuce on each plate.
  • Add the cheese, avocado, and salsa to the top of each salad. It is a good idea to have these toppings set out and allow each person to add as much as they like to their own salad.

I used some of my homemade corn salsa. You could use black bean salsa or spicy salsa for your salad. Top it with a dollop of cool sour cream and you are ready to eat. Delicious and simple to make! And this is a meal that kids and adults both will ask for again.
