Blackberry Oatmeal Crumb Bars

Blackberry Oatmeal Crumb Bars are a treat that I make for my family and they rave about them! A flaky crust on the bottom, a sweet, fruity middle layer, and a crunchy oatmeal and cinnamon layer on the top. You can eat them for breakfast, lunch or dessert.

I enjoy walking out my back door in the summer and picking fresh blackberries from the bushes growing around my house. Sometimes the blackberries get as big as a cork, sweet and juicy and perfect for recipes like this one.

If you prefer to remove some of the seeds from the berries, press half or more of the berries through a food mill. This will give you fewer seeds in your crumb bars.

Blackberry Oatmeal Crumb Bars

What’s needed:

Crust:

  • 1 3/4 cups flour
  • 1/4 cup sugar
  • 3/4 cup cold butter cubed (1 1/2 sticks)
  • pinch of salt

Filling:

  • 2 cups fresh blackberries or raspberries
  • 1/4 cup sugar
  • 1/4 cup water
  • 2 tablespoons cornstarch
  • 1/2 cup seedless blackberry jam or raspberry jam

Topping:

  • 1/2 cup cold butter cubed (1 stick)
  • 1/2 cup flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon

How to make Blackberry Oatmeal Crumb Bars?

  • Preheat the oven to 350 degrees. To make the crust, pulse the flour, butter, sugar, and salt in a food processor. Pulse until mixtures resembles coarse sand.

  • Put the crust mixture in a 13×9 baking dish and press evenly over the bottom of the pan. Bake for 20 minutes at 350 degrees until lightly golden brown. Remove from the oven and cool completely.

  • For the filling, mix the blackberries, sugar, water and cornstarch in a small saucepan over medium heat. Cook for 15 minutes. Use a potato masher to mash the berries and continue stirring often.
  • Turn off the heat and add the blackberry jam. Stir until combined. Cool for 10 minutes. Pour over the crust and spread evenly.

  • Pulse the ingredients for the topping in the food processor until well combined. Sprinkle the topping over the blackberry filling.

  • Bake for another 20 minutes until top is golden brown. Cool completely and cut into bars.

You can make a bit of glaze by mixing a cup of powdered sugar and a splash of milk. Drizzle it over the bars for an extra sweet treat. My family loves these bars and so will yours!
