Broccoli Ramen Salad
This has been a family favorite salad recipe for years. It’s one of the only salads that I make and I get a gasp in reply when I say, “We’re having Broccoli Ramen Salad with dinner tonight!” It’s crunchy, salty, tangy and slightly sweet. It comes together in less than 15 minutes and is so tasty paired with grilled chicken or beef. Need a fresh new salad, this one is a pleaser!
There are several versions of this recipe, but this one includes browning the Ramen noodles before adding them to the salad. This gives the broken noodles a buttery, nutty flavor. The dressing comes together quickly and adds a zesty punch of brightness. Put it all together and you have a unique salad that will be a great addition to any meal you cook on the grill. A terrific summer salad that gets you out of the kitchen fast!
Broccoli Ramen Salad Recipe
What’s needed?
- 13-ounce package chicken flavor ramen noodle soup mix
- 3 tablespoons unsalted butter
- 1/2 cup sunflower seeds
- 2 tablespoons sesame seeds
- 16-ounce package of broccoli slaw
- 1/4 cup sugar
- 1/4 cup balsamic vinegar
- 3 tablespoons olive oil
- salt and pepper to taste
How to make Broccoli Ramen Salad?
- In a medium skillet, melt the butter over medium heat. Remove the seasoning packet from the noodle package and reserve for use in the dressing. Add broken ramen noodles to the skillet and saute and stir constantly until golden brown, about 5 minutes.
- Add sesame seeds and sunflower seeds, stir for 1 minute and remove the skillet from the heat. Set aside.
- To a large salad bowl, add the broccoli slaw. Top it with the noodles and seeds.
- In a mason jar or a dressing shaker, add the sugar, vinegar, olive oil and ramen seasoning packet. Cover with a lid and shake well to combine. Pour the dressing over the salad and stir to coat.
- Refrigerate the salad until ready to serve. This salad tastes best when made in advance, allowing the flavors to absorb into the salad.
