Butter Pecan Granola
My son recently came home to visit and asked me to make some homemade granola for breakfast. I made Butter Pecan Granola using oats, pecans, coconut, and slivered almonds with a slightly sweet glaze. It was crunchy and delicious, a great breakfast treat with yogurt and fruit.
Pancake syrups come in a variety of flavors, like maple, blueberry and pecan. And to my surprise, I found Butter Pecan Syrup in the breakfast aisle at my local grocery store. As the name states, Butter Pecan Syrup is buttery and nutty, simply delicious served over hot pancakes. I also like to use it to make this yummy, crunchy granola. If you’re not able to find this syrup, add some melted butter to your maple syrup for a yummy substitute.
Butter Pecan Granola Recipe
What’s needed?
- 1/3 cup brown sugar
- 2 1/2 cups rolled oats
- 1 cup slivered almonds
- 1 cup chopped pecans
- 1 cup sweetened coconut
- 1/2 teaspoon salt
- 1/2 cup butter pecan syrup (or maple syrup with 2 tablespoons melted butter)
- 1/4 cup canola oil
How to make Butter Pecan Granola?
- Place the first 6 ingredients in a large bowl and mix thoroughly.
- Pour the syrup and canola oil over the granola mixture and stir until coated.
- Cover a 15×10 inch baking sheet with parchment paper. Pour the granola onto the sheet pan and spread it evenly.
- Bake the granola at 250 degrees for one hour and 20 minutes, stirring and turning it every 20 minutes.
- Allow the granola to cool and then place it in an airtight container or resealable plastic bag. You can also add dried fruit at this point, dried cranberries are always a good choice. This recipe makes about 6 cups of granola or 12 (1/2-cup) servings.
I love granola with Greek yogurt and fresh fruit for breakfast. It also tastes yummy sprinkled over vanilla ice cream! How easy was that?
