Caramel Snickerdoodle Bars

Snickerdoodle cookies have always been a favorite of mine. Sweet cookies with a hint of cinnamon. They go well with hot tea or ice cream. And those flavors make the foundation of this dessert. What could be better than a snickerdoodle crust? Add the caramel and a white chocolate topping to make the perfect sweet treat for a holiday celebration or a chilly winter day.
Caramel Snickerdoodle Bars Recipe
What’s needed?
- 1 cup butter, softened
- 2 cups packed dark brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup sugar
- 3 teaspoons ground cinnamon
- 2 cans (13 oz. each) dulce de leche
- 12 ounces white baking chocolate, chopped (or use chips)
- 1/3 cup heavy whipping cream
- 1 tablespoon light corn syrup
How to make Caramel Snickerdoodle Bars?
- Preheat the oven to 350 degrees. Line a 13×9 baking pan with parchment paper, making sure the paper overlaps the edges by at least an inch.
- In a large mixing bowl, cream butter and dark brown sugar until fluffy. Beat in the eggs and vanilla. Combine flour, baking powder and salt in a separate bowl. Gradually add to the creamed mixture. Beat until blended. Spread into the bottom of the prepared pan.
- In a small bowl, mix sugar and cinnamon. Sprinkle 2 tablespoons of the sugar mixture over the batter. Bake for 25-30 minutes or until the edges are light brown. Cool completely on a wire rack.
What is dulce de leche?
Dulce de leche is a rich, thick caramel-like sauce that comes in a can. While it tastes similar to caramel, it is slightly different because it is made by simmering milk and sugar slowly until it becomes thick creamy substance. It is made by a number of companies and can be found near the sweetened condensed milk in the baking aisle at your grocery store. I try to find it when it is on sale, it is about $3-$4 per can.
- Spread dulce de leche evenly over the crust. Mmm…
- In a small saucepan, melt the white chocolate with the heavy cream and the corn syrup over low heat. Do not burn the chocolate. Stir over low heat until smooth. Remove from heat and continue to stir until slightly cooled.
- Spread the white chocolate mixture over the dulce de leche. Sprinkle the remaining sugar mixture over the top. Cover and refrigerate for at least an hour.
- Lift with parchment paper and remove from pan. Cut into bars. I cut them fairly small since they are so rich and delicious. Enjoy with a warm cup of chai tea or coffee. You should be able to get 3-4 dozen bars out of this recipe.
