Chocolate Coconut Snowballs

This is such a sweet treat and requires absolutely NO baking. I would beg my mother to make these coconut cookies during the holidays. They were my favorite cookie as a little girl and that hasn’t changed over the years. Coconut topped with dark chocolate, they are the best. Chocolate Coconut Snowballs also keep well and can be made weeks ahead of the holidays.
A dollop of dark chocolate on top of a sweet little no-bake ball of coconut makes a delightfully simple holiday cookie. These Chocolate Coconut Snowballs are sure to become a family favorite, as they are in my house.
Chocolate Coconut Snowballs
What’s needed?
- 2 tablespoons melted butter
- 3 tablespoons water
- 2 teaspoons vanilla
- 2 cups powdered sugar
- 2 cups unsweetened flaked coconut
- 1/2 cup dried milk (found in the baking aisle)
- 2 ounces dark chocolate, melted (milk chocolate is also good)
How to make Chocolate Coconut Snowballs?
- Line a cookie sheet with parchment paper. Mix all ingredients in a medium bowl, except chocolate, until blended. Form into small balls and place on the cookie sheet.
- Melt the chocolate in the microwave according to package directions. Swirl a bit of melted chocolate on top of each cookie.
- Place the cookie sheet in the refrigerator until cookies are set.
- Store them in an airtight container. The recipe makes about two dozen cookies. The recipe only takes about 15 minutes and requires no baking. So simple but so good!
