My kitchen smells like chocolate and all things yummy! I’m baking up some Chocolate Zucchini Bread and sharing the recipe today. Zucchini, chocolate chips, and baking cocoa make this bread decadent and delicious. It is moist and rich enough to be served as dessert. Is your mouth watering yet?

One of the best ways to use zucchini is baking it in bread, like Chocolate Zucchini Bread. It is important to start with fresh zucchini. Wash it and cut it into chunks before placing it in a food processor or mini-chopper. A mini-chopper shreds about 1/2 cup of zucchini at a time. It is the perfect size to chop the small amount that is needed for this recipe. Shred the zucchini, add it to the batter and stir before baking.

So, let’s get started! Preheat the oven to 350 degrees, so you are ready to bake the bread when you have it all mixed together. The ingredients for the bread should be set on the counter nearby, so they are easy to grab and measure as you need them.

What’s needed?

  • 2/3 cup sugar
  • 1/2 cup canola oil
  • 2 eggs
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup baking cocoa
  • 2/3 cup shredded zucchini
  • 1/2 milk chocolate chips

How to make Chocolate Zucchini Bread?

Instructions:

  • Mix sugar, oil, eggs, milk and vanilla in medium bowl for 1 minute with an electric mixer on medium speed. Set aside.
  • Stir flour, baking soda, salt and baking cocoa in a large bowl until combined.
  • Add wet ingredients to dry and mix on low speed for two minutes.
  • Wash and shred zucchini in a mini-chopper or food processor.
  • Fold in shredded zucchini and chocolate chips.
  • Pour batter into a 9×5 loaf pan that has been sprayed with cooking spray.
  • Bake for 45-50 minutes at 350 degrees.
  • Allow the bread to cool for 20 minutes before removing it to a plate to cool completely.
  • This recipe makes 10 servings.
