Easy Apple Oatmeal Cookies
Adding applesauce to a recipe is a great way to add sweetness and flavor without adding calories. That is certainly true for this recipe, Apple Oatmeal Cookies. Applesauce, oats, yellow cake mix and chunks of apple come together to make tasty cookies…and best of all, you can eat more than one without feeling guilty.

A box of yellow cake mix makes this recipe easy to make and affordable. The cookies come together in just minutes and are great for a lunchbox treat or an afternoon school snack. Crispy around the edges and chewy in the middle, these cookies have all the flavors of a homemade apple pie.

What type of apples should I use?
I used Gala apples, a common and readily available apple anytime of the year. If you like your apples more tart than sweet, try using a Granny Smith apple. For a real treat, chop a Honeycrisp apple to use in this recipe.

Apple Oatmeal Cookies
What’s needed:
- 1 box yellow cake mix
- 1 1/2 cups quick cooking oats
- 1/2 brown sugar
- 2 teaspoon cinnamon
- 1 large egg
- 1 teaspoon of vanilla
- 1 cup finely chopped peeled apples
- 3/4 cup unsweetened applesauce
- 1/2 cup golden raisins (optional)
How to make Apple Oatmeal Cookies?
- In a large bowl, combine the cake mix, brown sugar, cinnamon and oats.

- In a separate medium bowl, combine the wet ingredients and stir until blended. Add the mixture to the dry ingredients and combine thoroughly. Stir in the apples. And stir in raisins, if desired.
- Heat the oven to 350 degrees. Drop dough by heaping tablespoonfuls onto a baking sheet covered with parchment paper or sprayed with cooking spray. Place the cookies two inches apart and bake for 13-15 minutes.
- Remove the cookies from the oven and allow them to cool on the baking sheet for 3 minutes. Then remove them to a baking rack to cool completely. This recipe makes about 2 dozen large cookies.
