Fresh Pineapple Salsa

There’s nothing like the bright flavors of a fresh pineapple. It makes the best Fresh Pineapple Salsa for tacos, pan seared snapper, barbecue chicken or simply for dipping with tortilla chips. A few simple ingredients come together to give you a vibrant salsa to serve with your favorite seafood and chicken dishes.

Fresh Pineapple Salsa

Pineapples are typically grown in Hawaii and Florida. They bloom in early spring and ripen in early summer. They are juicy and have bright, acidic flavors that are great for adding to cocktails, smoothies, fruit salads and salsa. Blended with other flavors, a fresh ripe pineapple will give you a dish that is sweet and full of fresh flavor.

How to serve Pineapple Salsa?

  • Scoop it with chips– We love this sweet, fruity salsa with salty tortilla chips. The combination of flavors is amazing and so very refreshing on a hot summer day.
  • Serve it with seafood– Make pan seared snapper and pile the pineapple salsa over the top of the fish. It adds that punch of citrus that makes the fish especially delicious.
  • Serve it with grilled ham or barbecue chicken– Serve this salsa with your favorite food from the grill. It is yummy with tangy barbecue chicken or salty grilled ham. We also like to serve it over rice, so it will soak up all the flavors of the salsa.
  • Serve as dessert– Mound the pineapple salsa up on top of a bowl of banana ice cream for a real treat. You will need to omit the onion and cilantro if serving as a dessert. It is a perfect match of tropical flavors all in one bowl. Drizzle with chocolate syrup and add a sprinkle of shredded coconut to send it over the top.

Fresh Pineapple Salsa Recipe

What’s needed?

  • 1 cup fresh pineapple, diced
  • 1/2 cup seedless cucumber, diced
  • 1/2 cup red pepper, diced
  • 1/4 cup yellow onion, diced (or shallots)
  • 2 tablespoons cilantro, chopped (or parsley)
  • 2 tablespoons pineapple juice
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt

How to make Pineapple Salsa?

  • Dice all of your ingredients into small pieces, about 1/4 inch each. Place them in a medium bowl and add the lime and pineapple juice.
  • Season with salt and chill in the refrigerator until ready to serve. Recipe makes 4 servings.

What can I add to pineapple salsa?

  • Avocado– Want to make the salsa just a little creamy, add some diced avocado and stir it in. It adds a soft, creamy element that marries well with the cilantro. Yum!
  • Sweet corn– Almost any fresh sweet summer veggie will work well in this dish. Always remember to look for what is in season and use that to complement this bright salsa recipe. Blanch the corn for 2 minutes and remove the kernels from the cob. Stir them into the salsa and enjoy.
