Frosted Pumpkin Spice Cookies

I have always been a fan of Duncan Hines boxed cake mixes. They bake up moist and delicious every time. They make a great shortcut to measuring out your own cake ingredients. And, they can be used in a variety of cookie recipes, too. They are so versatile and affordable, I always keep at least 4 or 5 boxes of Duncan Hines cake mixes of different flavors in my pantry. Yellow, white, lemon, chocolate and spice cake mix are just a few of my favorites. I keep them on hand so I have one when I need it.
Frosted Pumpkin Spice Cookies
What’s needed?
- 15-ounce box of Duncan Hines Perfectly Moist Spice Cake mix
- 15-ounce can of Libby’s pure pumpkin
- 1 Duncan Hines Creamy Vanilla or Cream Cheese Frosting

How to make Frosted Pumpkin Spice Cookies?
- Mix the cake mix and the pumpkin in a medium bowl until combined. Use a small scoop to place rounded balls (about 2 tablespoons) of batter onto a cookie sheet lined with parchment paper. Bake the cookies in a 350 degree oven for 13-15 minutes until set and cooked through.
- Place the cookies on a wire baking rack to cool before frosting them. Frost each cookie with a small amount of frosting.

Are these cookies affordable?
The recipe makes 30 cookies and my cost was 14 cents per cookie! Great flavor, great value! These cookies would be fun for a school bake sale, a tailgating party with friends before the big game, or a sweet treat after a visit to a local pumpkin patch. I can tell you, they didn’t last long in my house. Simply yummy!
