Hearty Crockpot Casserole

Hearty Crockpot Casserole Recipe
What’s needed?
- 1 1/2 pounds ground beef, browned and fat drained
- 1 medium onion, chopped
- 2/3 cups carrots, chopped
- 1/2 cup celery, chopped
- 2 cups cabbage, chopped
- salt and pepper
- 2 bay leaves
- 1 teaspoon Italian seasoning (or Oregano)
- 4 or 5 medium potatoes, sliced
- 3 tablespoons butter
- 2 tablespoons flour
- pinch of salt
- 2 cups of beef stock
- 2 dashes of Worcestershire Sauce
- 1 cup of mild cheddar cheese, shredded
How to make Hearty Crockpot Casserole?
- Brown the ground beef and onion in a large skillet over medium-high heat until the beef is no longer pink. Add the mixture to the Crockpot.
- Top the ground beef mixture with the chopped veggies in layers, carrots and celery.
- Add the Italian seasoning, bay leaves and layer the cabbage on top.
- Add salt and pepper, about 1 teaspoon of each, on top of the cabbage. Now layer the potatoes slices over all.
- In a medium skillet, melt the butter and add the flour. Stir with a whisk over medium heat until combined. Continue to cook until bubbly and slightly browned. Add the beef stock, the Worcestershire sauce and continue to stir.
- Add the shredded cheddar and stir until thickened, about two minutes.
- Remove the sauce from the heat and pour the mixture over the potatoes in the Crockpot, spreading it evenly as you go.
- Cover the Crockpot and cook on High for 4-5 hours. Do not remove the lid during cooking. Remember to remove the bay leaves before serving.
You can serve this hearty casserole with cornbread and a green leafy salad. This meal is one that your family will ask for again and again!
