Lasagna Roll-ups
These easy Lasagna Roll-ups are always a hit with my family! Simply make the filling, spread it on each lasagna noodle and ROLL THEM UP. It’s just that easy…and so, so delicious! I like to make two different fillings and bake two separate dishes, one with alfredo sauce and one with tomato sauce. Eat one tonight and freeze one for later. It’s sure to please all the pasta lovers in your family!
This is truly one of my family’s favorite Italian dishes. Lasagna Roll-Ups are versatile because you can customize them with a variety of your family’s favorite ingredients. If you like ground beef with tomato sauce, fill the lasagna noodles with that. If you like spicy Italian sausage and alfredo sauce, put that it your roll-ups. I often add spinach leaves or fresh basil for added flavor and color.
Then, simply roll them up, place them in a casserole dish and cover liberally with sauce and cheese. They are easy to make and easy to bake and always taste great.
I serve these Lasagna Roll-Ups with a leafy salad and crusty bread for a complete meal. If your family loves Italian food like we do, this recipe is one that you’ll want to make on repeat!
This recipe is also a great Make Ahead Meal, as you can prepare the roll-ups in disposable aluminum pans, then cover and keep them in the refrigerator until ready to bake. Bake them and cover with foil before heading out the door. Lasagna Roll-Ups travel well and can be reheated, if necessary.
Tips on making the Lasagna Roll-Ups:
- Boil your noodles according to package instructions and drain well. It is important to work with noodles that are not wet.
- Have all of your ingredients cooked and on the kitchen counter within reach. This allows you to easily assemble the roll-ups. Cook your meat and add the sauce. Remove it from the heat. Mix your cheeses in a medium bowl and have it ready to go. Extra shredded cheese can be in a small bowl for easy access. You are essentially creating an assembly line.
- Use a large sheet pan to lay out the lasagna noodles, so that you can easily and quickly spread the filling on each noodle. Remember to drain the noodles well for best results. One sheet pan will hold 6 cooked lasagna noodles. Add the filing, roll them up and place them seam side down in a 9×13-inch baking dish that has been sprayed with cooking spray.
- Make sure to cover the roll-ups completely with sauce. This will keep them soft and flavorful while baking. Add shredded Parmesan cheese just before roll-ups are done baking. Allow the cheese to melt before removing the roll-ups from the oven.
Lasagna Roll-Ups Recipe
What’s needed?
- cooked lasagna noodles
- ricotta cheese
- egg
- Italian Seasoning
- parmesan cheese
- pasta sauce
- mild Italian sausage
- mozzarella cheese
- fresh spinach leaves, stems removed
How to make Lasagna Roll-Ups?
- Cook lasagna noodles according to package instructions. Drain well. Wash spinach, dry and remove the stems.
- In a medium bowl, combine ricotta cheese, egg, 1/4 cup of grated Parmesan, and Italian seasoning. Stir until combined, set aside.
- In a large skillet, cook the sausage until browned. Add one jar of prepared pasta or marinara sauce. Remove from the heat.
- On a large sheet pan, lay 6 lasagna noodles side by side. Spread each with ricotta cheese mixture. Then add meat sauce and spinach. Roll each noodle up and place them seam side down in a 9×13-inch baking that has been sprayed with cooking spray. Cover with another jar of pasta sauce and sprinkle with mozzarella cheese.
- Bake in a 350 degree oven for 25 minutes. Add remaining grated Parmesan and bake for 2 more minutes until cheese is melted. Remove lasagna roll-ups from the oven and allow to cool slightly.
- Serve with an Italian salad and crusty bread. Recipe makes 12 servings.

- 1 pound Italian sausage
- 24 ounces ricotta cheese
- 1 large egg
- 2 teaspoons Italian Seasoning
- 1 cup parmesan cheese, grated
- 2 cups mozzarella cheese, shredded
- 2 cups fresh spinach leaves, stems removed, optional
Instructions
