Pumpkin Whoopie Pies

My friend Judy recently shared her recipe for Pumpkin Whoopie Pies. It is a perfect Fall treat. Judy is an amazing woman who puts family and faith first. She also enjoys cooking and baking with her mother and grandchildren. Judy is retired now and spends more time doing the things she loves, like making these sweet fall treats.

Pumpkin Whoopie Pies

It is the season to be baking and enjoying the delicious flavors of Fall. And that, of course, includes pumpkin treats and desserts. These Pumpkin Whoopie Pies are filled with cinnamon and spice and everything nice, including a rich, cream cheese frosting for the filling. Invite your family to make them with you. Baking desserts and making memories, there’s nothing better.

Pumpkin Whoopie Pies Recipe

What’s needed?

  • 3/4 cup canola oil
  • 1 1/2 teaspoons vanilla extract
  • 1  1/2 cups brown sugar
  • 2 eggs
  • 1  15-ounce can pumpkin
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg

How to make Pumpkin Whoopie Pies?

  • Mix the brown sugar, oil and vanilla in a large bowl. Add eggs one at a time. Add pumpkin and mix. Sift together the remaining dry ingredients and add it to the pumpkin mixture and beat all until blended.
  • Using a scoop, place cookies about 2 inches apart on a lightly greased cookie sheet. Bake at 350 degrees for 10-12 minutes. Allow the cookies to cool completely.

How to make Cream Cheese Frosting?

  • 1 8-ounce package cream cheese
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla
  • 4 1/2 cups confectioners sugar

Instructions:

  • Beat the frosting ingredients in a large bowl until smooth. Put some creamy frosting between two cookies to make your whoopie pies. So, so SWEET!
