Quick Guacamole
This favorite chunky dip made of ripe avocados and diced tomatoes can be a tasty summer appetizer or served with a Mexican main dish. Quick Guacamole always gets rave reviews when I serve it to friends and family. Once you started eating it, you won’t be able to stop!

What is guacamole?
Salsa and guacamole have quickly become two of the most popular dips in America. Salsa now outsells ketchup each year. It is lower in calories than ketchup and tastes zesty and sweet. Salsa can be eaten with tortilla chips or added to tacos and more.
Guacamole is a combination of avocado, onion, fresh tomato, lime juice and cilantro. And it is loved by so many because it is made with ripe avocados, a superfood that is loaded with nutrients and vitamins. Avocados are high in fiber, potassium, vitamins E and C. They are also considered to be a super food, because of their high amount of monounsaturated fat.
A great way to get avocado in your diet is to make Quick Guacamole. These two healthy dips/condiments are certainly a dynamic duo! In this recipe, the avocados are chopped instead of smashed, giving the dip a chunky, yet creamy texture.

Quick Guacamole Recipe
What’s needed?
- 3 medium avocados, chopped and slightly mashed
- 2 small tomatoes, chopped (Roma or Vine-Ripened)
- 1/2 small white onion, diced
- 1 lime, juiced
- 2 tablespoons fresh cilantro or parsley, chopped
- salt and pepper, 1/2 teaspoon each
- 1/2 teaspoon cayenne pepper, optional

How to cut an avocado?
- Cut the avocado in half lengthwise from top to bottom, rotating the knife around the pit and turning the avocado.
- Twist each half in the opposite direction and the avocado will separate down the middle, leaving a large seed in one half.

- Use your knife to cut the avocado in half lengthwise again. Twist the knife to remove one quarter of the avocado and then use your fingers to twist off the seed.
- Cut lines through the flesh of the avocado and then cut line in the opposite directions, making cubes. Slide a spoon between the skin and the flesh of the avocado and scoop it out. The cubes will separate easily from the tough outer skin of the avocado. Place the cubes in a bowl.
How to make Quick Guacamole?
- Chop the avocado into small pieces and place them in a bowl. Add the juice of a lime and stir to coat. This prevents the avocado from turning brown and adds a bright flavor to the dip.
- Add the chopped tomatoes, diced onion, salt, pepper, and cilantro. Stir all together. If you do not like cilantro, you can also use flat-leaf parsley. Add a pinch of cayenne pepper for some spice.
This recipe makes 6 servings. You can serve this dip with corn tortilla chips for dipping. It is also delicious when served with Taco Cups or Beef Enchiladas. Quick Guacamole is always a flavorful dish and so nutritious!
