Sheet Pan Sweet Potatoes and Green Beans

Sweet potatoes were not my favorite vegetable as I was growing up. They were always boiled and mashed and had a sweet topping. Once I began cooking for my own family, I learned that sweet potatoes can be roasted. Just cube them and place them on a sheet pan with other veggies, like green beans and onions, and roast them at 375 degrees for about 25 minutes. They are sweet and savory, and they do not need any additional sugar.
These roasted vegetables marry well with almost any protein you might be serving, including fish, chicken, pork and beef. We like them best with pork. I recently served Roasted Sweet Potatoes and Green Beans with spareribs and it was a wonderful combination.
Sweet potatoes can be roasted with a variety of vegetables. Depending on what your family likes and what’s in season, you can select green beans, broccoli, new potatoes, carrots or red onions. Almost anything that you can cut into the same size as your cubed potatoes will work. Try to avoid vegetables that will give off a lot of water and become dry, like zucchini and mushrooms.
Sheet Pan Sweet Potatoes and Green Beans
Recipe makes 4 servings.
What’s needed:
- 2 large sweet potatoes
- 2 cups green beans, trimmed and cut
- 1 medium yellow (or white) onion
- olive oil
- 1 teaspoon Italian seasonings
- salt and pepper to taste
- 1/4 cup slivered almonds (optional)
How to make Sheet Pan Sweet Potatoes and Green Beans?
- Peel and cube sweet potatoes, cutting them into 1 inch pieces. Chop onion into 1 inch pieces.
- Clean, trim and cut green beans into 1 inch pieces. Lay all vegetables on a sheet pan. Drizzle with olive oil and sprinkle Italian seasonings over all.
- Bake for 25 minutes at 375 degrees. Add almonds during the last 5 minutes of baking. Salt and pepper to taste. This recipe makes 4 servings.
