Sour Cream and Chive Potatoes
My family really loves potatoes…especially crispy Sour Cream and Chive Potatoes. This recipe goes well with steak, chicken, or pork chops. The sour cream adds some zip and the crunchy topping makes these potatoes simply irresistible!
Sour Cream and Chive Potatoes are creamy, crunchy and delicious. Fresh chives added to the recipe gives the dish a slightly oniony flavor. Chives can be found in your fresh produce section during all seasons of the year. They are affordable and can also be used on baked potatoes and potato skins for great added flavor.
Sour Cream and Chive Potatoes
Ingredients:
- 6 medium potatoes, peeled and sliced
- salt and ground black pepper
- 1 teaspoon paprika
- 1/4 cup fresh chives, chopped
- 4 tablespoons butter
- 3 tablespoons flour
- 2 1/2 cups milk
- 1/2 cup sour cream
- 2 cups Kettle Cooked Potato Chips, crushed (optional)
How to make Sour Cream and Chive Potatoes?
- Spray a 3 quart baking dish with cooking spray. Place the peeled and sliced potatoes in the dish and add salt, pepper, and paprika. Add the chopped chives and toss potatoes to coat.
- In a large skillet, melt the butter over medium heat and add the flour. Cook for two minutes while stirring. Add the milk, sour cream and a pinch more salt. Continue to stir and allow the sauce to thicken. This may take 5-6 minutes. Pour the sauce over the potatoes and add the crushed chips on top. Bake at 350 degrees for 50-55 minutes.
- Remove the potatoes from the oven when the top is golden brown and the potatoes are tender.
Serve these creamy, crunchy potatoes alongside steak and a leafy green salad. You’ll want to make these again and again. Recipe makes 8 servings.
