Strawberry Feta Salad

Late spring is a delicious time of the year with the abundance of fresh strawberries that are available. Picking them at a local farm is fun and a great way to make sure the berries are ripe and vibrant. Combine those red beauties with leafy spinach, crisp romaine, salty sunflower seeds, pecans and creamy feta cheese to make this tasty Strawberry Feta Salad. The balsamic dressing ties it all together and makes you want more!

Beautiful, red, ripe strawberries are in season in late Spring and such a great addition to salads and desserts. Their sweetness is unmatched and they are full of antioxidants, nutrients and vitamins. I use strawberries every spring to make Strawberry Freezer Jam, Strawberry Shortcake and so many other seasonal favorites.

This 15-minute side dish is a perfect addition to the menu at a bridal shower, a Sunday supper or a simple weeknight meal. Add a few crunchy elements, like sunflower seeds and chopped pecans to make it even more tasty. The balsamic dressing balances well with the sweet strawberries and feta cheese, giving this salad brightness and a punch of flavor.

Strawberry Feta Salad Recipe

What’s needed?

  • 3 cups romaine, rinsed and chopped
  • 2 cups baby spinach, stems removed
  • 2 cups fresh strawberries, rinsed and halved
  • 1/2 cup crumbled feta cheese
  • 1/2 cup pecans, roughly chopped
  • 1/3 cup toasted sunflower seeds
  • 1 tablespoon honey
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt

How to make Strawberry Feta Salad?

  • In a large, shallow bowl, layer the first 6 ingredients, beginning with chopped romaine and ending with the sunflower seeds.
  • In a mason jar or salad dressing shaker, add the last 5 ingredients and shake until combined. Add the dressing to the salad just before serving. Recipe makes 4 servings.
