Tuscan Salmon with Pasta

If I’m looking for a quick weeknight meal, this is a delicious recipe that comes together easily and everyone enjoys. The fish is flaky and tender and the sauce is rich and creamy. Tuscan Salmon with Pasta only takes about 35 minutes to prepare and brings you all the flavors of Italy! Ciao!

Tuscan Salmon with Pasta

Adding sour cream or heavy cream and Parmesan cheese to the sauce as the finishing touch makes it rich and creamy. It really takes this dish to the next level. The classic flavors of Italy shine in this bright, delicious meal.

Tuscan Salmon with Pasta Recipe

What’s needed?

  • 3 salmon fillets, about 4 or 5 ounces each (or chicken fillets)
  • 2 tablespoons olive oil (I used lemon infused olive oil)
  • 2 tablespoons butter
  • 3 teaspoons minced garlic
  • 1 small yellow onion, chopped
  • 1/2 cup chicken broth ( or water)
  • 1 cup crushed tomatoes
  • 1 teaspoon Italian Seasoning
  • 1 cup sour cream (or heavy cream)
  • salt and pepper
  • 3 cups fresh spinach leaves
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon dried parsley

How to make Tuscan Salmon?

  • Add the olive oil to a large skillet set to medium-high heat. Sprinkle the salmon with salt and pepper and sear the fish on each side for 5-7 minutes. Once the pink center is gone and the salmon is cooked through, remove the fillets to a plate and set aside.

  • Melt the butter in the same skillet. Stir in the chopped onion and cook for about five minutes until soft. Add the garlic and cook for one more minute. Stir in the tomatoes, chicken stock, and Italian Seasoning. Simmer while stirring for a few minutes to thicken the sauce. Turn the heat down to low and add the sour cream. Add salt and pepper to taste.
  • Stir the sauce until well blended. Add the spinach until wilted. Add the Parmesan cheese and stir until melted.

  • Add the seared salmon fillets back to the pan and spoon the sauce over each fillet. Add the dried parsley flakes and simmer the fillets for 2-3 minutes until heated through.
  • Prepare some thin spaghetti or pasta or your choice. Serve the salmon over the pasta with a side veggie. I sautéed green beans in some butter.
