Unstuffed Peppers
One of the most comforting meals my mother taught me how to make was her Stuffed Peppers. I’ve made it for years and it is a family favorite. I have been working on slow-cooker recipes recently, so I developed my version of Unstuffed Peppers made in the slow-cooker. Super simple to prepare, very affordable, and the same great flavors. Hope you enjoy this twist on an old family favorite!
When you talk about comfort food, this recipe comes to mind immediately. Ground beef, onion, green pepper, rice and a thick zesty tomato sauce come together in the slow-cooker to make a hearty, comforting meal for your family. And the best part is that it cooks while you are away, so you can come home to a house the smells great and a meal that will satisfy your family.
There’s a surprise ingredient in this recipe, a jar of salsa. Tomato paste, salsa and beef stock simmer together in the slow-cooker to make a thick and slightly spicy sauce for this meal. This hearty sauce makes the ground beef rich and flavorful.
Unstuffed Peppers Recipe
What’s needed?
- 1 1/2 pounds ground beef
- 1 medium onion, chopped
- 2 teaspoons minced garlic
- 1 teaspoon Italian Seasoning
- 1 teaspoon salt
- 1 large green pepper, cut in half inch pieces
- 1/2 cup uncooked rice
- 16 ounces beef stock (chicken or vegetable stock will also work)
- 3 heaping tablespoons of tomato paste (1/2 of a small can)
- 1 16 ounce jar of salsa (I used sweet corn salsa. Use what you like!)
How to make Unstuffed Peppers?
- Cook the ground beef, garlic, and onion in a large skillet over medium heat. Cook until beef is no longer pink. Drain the beef and add salt and Italian Seasoning. Place the meat mixture in the slow-cooker.
- Add the remaining ingredients and stir. Cover the slow-cooker and cook on high for 3 hours, stirring once halfway through the cooking time.
I served Unstuffed Peppers with mashed potatoes and peas. Comfort food at its best…and so very simple to make!
