Ingredients
1poundground chicken
1tablespoonminced garlic
1 teaspoonginger, grated
1mediumonion, chopped
1/3cuphoisin sauce
3tablespoonssoy sauce
1tablespoonrice wine vinegar
8ounceswater chestnuts, drained and chopped
1/2cupgreen onions, sliced (optional)
salt and pepper to taste
8leavesiceberg lettuce, rinsed
8ouncesAsian Slaw or stir fry veggies
Instructions
Add the ground chicken to a wok (or large skillet) and cook over medium high heat for about 4 or 5 minutes. Add a tablespoon of canola oil if the meat is lean and becomes dry while cooking. Cook until browned, then add the garlic, ginger and onion. Cook another 3 minutes until the onion is soft.
Add the Hoisin sauce, soy sauce, rice wine vinegar and the chopped water chestnuts and cook for an additional 5 minutes. Season with salt and pepper. Remove the wok from the heat and sprinkle the green onions over the mixture, if desired.
Serve the chicken mixture on a platter with the lettuce leaves and some crunchy Asian Slaw, including shredded Napa cabbage, shredded carrots, thinly sliced red peppers and shredded purple cabbage.
