These no-bake Coconut Bird Nest Cookies are easy to make and can be served for Easter or as a fun spring dessert.

Ingredients
2tablespoonsbutter, melted
3tablespoonswater
2teaspoonsvanilla
2cupspowdered sugar
2cupsflaked coconut, sweetened
1/2cupdried milk
food coloring or colored sugar
Jelly Beans for decoration
Instructions
Put all ingredients (except jelly beans) in a large bowl and mix thoroughly with a spoon. Divide the mixture equally into three smaller bowls.
Now comes the fun part. Grab whatever food coloring or colored sugar you might have in the cupboard. I added green sugar to the first bowl, red and blue food coloring to the second bowl to make purple, and yellow gel icing tint to the third bowl.
Now you are ready to make your nests. Take a round tablespoon of coconut mixture and place it on a cookie sheet covered with parchment paper. Press down with your thumb to make a hole in the middle. I did the green sugar batch first. Repeat until bowl is empty.
I used Brach's Speckled Jelly Bird Eggs to decorate the cookies. These look just like small bird eggs. You should get about 6 nests from each bowl of coconut mixture, 18-20 cookies in total. Cover the nests loosely with plastic wrap and allow them to set up, about an hour.
Place the cookies on a serving tray with marshmallow Peeps, cut-out sugar cookies or whatever other Easter Treats you have on-hand. Your family will rave about these, mine does!
