Brioche bread is covered with an egg mixture, dipped in a crunchy coating and lightly fried to make delicious Crunchy French Toast.

Ingredients
4slicesbrioche, thick-cut bread
1/2cupmilk
1/2teaspoonvanilla
2largeeggs
2cupscereal, Honey Bunches of Oats, crushed
syrup and fruit, for topping
Instructions
Add eggs, milk and vanilla to a shallow bowl or plate. Whisk until combined.
Place cereal in a gallon-size plastic bag and use a rolling pin to gently crush the cereal to form crumbs. Put the crushed cereal on a second plate.
Add two tablespoons of canola oil to a large skillet over medium heat.
Dip each slice of bread in the egg mixture, flip to dip the second side. Then dip in the cereal crumbs to cover. Gently place the coated bread in the skillet and cook for 3 to 4 minutes per side, until golden. Repeat with remaining slices of bread.
Place french toast on a serving plate and serve while warm with fruit. This recipe makes 4 slices, recipe can easily be doubled.
