Easy Apple Hand Pies use refrigerated pie dough to make them quick and easy. A favorite fall dessert that you'll want to make each year.

Ingredients
1refrigerated pie crust
2mediumapples, peeled and chopped
2tablespoonsunsalted butter
1/2teaspoonground cinnamon
2teaspoonssugar
1/2cupwater
2tablespoonscornstarch
1largeegg
2tablespoonmilk, divided
1/2cupconfectioners' sugar
Instructions
Heat the oven to 425 degrees. Unroll the refrigerated pie crust and allow it to come to room temperature on the counter.
Peel and chop the apples and add them to a medium bowl with cinnamon and sugar. Toss to coat.
Melt the butter in a medium skillet over medium heat. Add the apple mixture, cover with a lid and cook for 8-10 minutes, until apples are golden brown and slightly soft. In a small bowl, dissolve the cornstarch in the water and stir until no lumps remain. Add this slurry to the apples and stir. Cook for another 5 minutes while stirring. This will be the apple filling for the hand pies. When thickened, remove it from the heat and allow to cool.
Unroll the pie crust and make 4 equal pieces by cutting top to bottom and side to side. Place a few tablespoons of apple filling in the center of each piece of dough. Fold opposite corners together and press gently. Crimp all edges with a fork to seal tightly. Place hand pies on a sheet pan lined with parchment paper. Cut two slits in the top of each pie.
In a small bowl, whisk together egg and one tablespoon milk. Brush each hand pie lightly with the egg mixture. Bake for 12-14 minutes at 425 degrees.
Remove from the oven and allow to cool. In a small bowl, mix confectioners' sugar and one tablespoon milk until smooth. Drizzle icing over each hand pie. Recipe makes 4 hand pies. Store hand pies in individual plastic bags.

Notes
Remember to allow the apple filling to cool before adding it to your hand pies. If it is too warm, the dough may tear and fall apart from the heat. All ingredients should be at room temperature for best results.
