Ingredients
6slicesbacon, cut into 1/2 inch pieces
1/3headgreen cabbage, chopped
1mediumonion, sliced
2tablespoonsbutter
1/2teaspoongarlic salt
1/2cupmilk
1/2cupall-purpose flour
2cupspanko crumbs, seasoned
12Ritz crackers, finely crushed
4thin-cutpork chops
1/4cupcanola oil
salt and black pepper to taste
Instructions
How to make cabbage with bacon:
Heat a large non-stick skillet to medium heat. Add the bacon pieces and cook until slightly crisp and browned, about 8 minutes.
Stir in the butter and allow it to melt. Add the cabbage and the onions to the skillet. Cover with a lid and saute the cabbage until soft, about 15-18 minutes, stirring occasionally. Add salt and black pepper to taste.
How to make the breaded pork chops:
While the cabbage is cooking, place the milk and flour each on separate plates. Combine the cracker crumbs and breadcrumbs on a third plate. Dip each pork chop in flour, then milk, and finally in the breadcrumb mixture until well coated.
Add the canola oil to a large skillet over medium heat. Place the breaded pork chops in the skillet and cook until golden, about 3 to 5 minutes. Turn each chop and brown the other side for another 3 minutes. Sprinkle with garlic salt.
Place the browned chops on plate lined with paper towels. (If your pork chops are thick-cut, place them on a wire rack inside of a baking pan and bake at 350 degrees for 10-15 minutes after browning.) Use a meat thermometer to check doneness, pork is done at 145 degrees fahrenheit. Recipe makes 4 servings.
