Ingredients
1 1/2cupsmilk
1cuppumpkin, (canned)
1egg
2tablespoonsbutter, melted
2tablespoonswhite vinegar
2cupsall-purpose flour
3tablespoonsbrown sugar
2teaspoonsbaking powder
1teaspoonbaking soda
1teaspoonallspice
1 1/2teaspoonsground cinnamon
1teaspoonground ginger
1/2teaspoonsalt
Instructions
In a bowl, mix milk, pumpkin, egg, butter and vinegar. In a separate bowl, combine the remaining ingredients. Stir the dry ingredients into the pumpkin mixture just until combined. Do not overmix.
Heat a lightly oiled griddle or frying pan over medium heat. I used my new DASH mini-waffle maker and sprayed it with a bit of cooking spray.
For the mini-waffle maker, I used 3 tablespoons of batter for each pancake. When using my Rival griddle, I use a 1/4 measuring cup to pour batter onto the griddle.
Close the lid of the mini-waffle maker and wait about 2 minutes. The indicator light will turn green when the pancakes are ready. Remove the pancakes from the waffle maker and keep warm until ready to serve. Recipe makes 16 small pancakes or 8 large pancakes.
